Pizza. One of the best things to come out of Italy. You probably have a pizza place about 10 minutes away from your home and perhaps you can get it delivered to your door right from your phone but what happens when you want endless topping options without pinching from your savings?
Well, you could make it yourself. So, I am going to guide you through the process of how to make pizza without the woodfire oven, the paddle or even the yeast! Now I know what you are thinking – Yeast is quite an important step to leave out. Yes it is, but I got an alternative. So I am going to take you through the process of making the dough, the pizza sauce, and the toppings that I used. Lets go!

Feeds - 2 people
Pizza Dough:
- 375 ml self-raising flour
- 1 cup full-fat plain yogurt
- 1 tsp salt
- 2 tsp oil for bowl
That's it, now the instructions -
- Add flour and salt to your surface, make a well in the middle.
- Add your yogurt to the middle of the well.
- Begin to fold the ingredients together by hand, should take about 2 minutes to begin to form.
- Keep kneading for a further 5 minutes until you can form it into a ball.
- Get some flour onto your hands and surface and rub off any dough that sticks to your hands.
- Once the dough ball is formed, grab a bowl, add the oil and spread it around the bowl then put the dough into the bowl and put a dish towel on top of it. This dough should give you a 30cm+ pizza. Let the dough rest while we work on the sauce and toppings.
Pizza Sauce:
- 1 Can tomato puree
- 1 tsp dried oregano
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp sugar
- Pinch of Black Pepper
This part is easy. Instructions -
- Grab a cooking pan, medium heat on the stove. add all of your pizza sauce ingredients.
- We want the sauce to cook to get rid of any unnecessary acidity from the tomatoes.
- Once it starts to bubble, mix and cook for a further 10 - 15 minutes to ensure the flavour of the spices brighten up the sauce.
- Set aside to cool and then taste to ensure you like it.
Toppings:
- 1 Large Chicken Breast cut into pieces
- Half an onion finely chopped
- 1 tsp crushed garlic
- 2 tbsp oil
- 1 tbsp butter
- 1 tbsp hot sauce of your choice
- 1 tbsp tomato ketchup of your choice
- a handful of sliced gherkins (optional)
- 100 grams of mozzarella cheese
- 100 grams of grated cheddar cheese
- Salt and black pepper to taste
Okay, this is the last part where we put it all together. Instructions -
- Season your chicken with salt and pepper.
- Grab a cooking pan, medium heat. Add your oil, butter, onion and garlic and cook until the onion is soft.
- Add your hot sauce and ketchup, then mix until all ingredients are combined.
- Add your chicken and cook for about 15 minutes. Set aside to cool and taste for seasoning.
- Pre-heat oven to 260 Degrees Celsius (500 Degrees Fahrenheit)
- Onto the dough. Flour your surface and your hands then use your fingertips and begin to press the dough, be gentle because we don't want to break the dough.
- Keep pressing the dough with your fingertips from the centre going out to form the base.
- When you are happy with the thickness and size of the dough, transfer it to an oven tray that has been oiled and floured to prevent sticking and to give the base some colour when its comes out.
- Now get your sauce. Scoop the sauce once with a ladle and then drop onto the middle of the pizza base. Use the bottom of the ladle to spread throughout the base, starting in a circular motion from the middle going outwards. Leave a centimeter circumference of pizza base without sauce to get a nice crust.
- Break up your mozzarella cheese and place all over the pizza base.
- Now we add the chicken all over the pizza base with all the sauce it was cooked in.
- Add gherkins (if you want. I used it because it gave the pizza some texture)
- Add your cheddar cheese all over the pizza.
- Put it in the oven for 12 - 15 minutes and that's it. DONE! Slice into 4 or 8.
